Good afternoon CSA friends,
Thinking today about everyone along the Gulf coast, hoping and praying for their safety!
Since we have okra in our shares again this week, anyone have a good recipe using okra that you would like to share with other members? I’ll be happy to put it in next weeks Newsletter if you’d like to share it. All cooks like to change things up a bit in the kitchen, and enjoy trying out new things on our families.
What’s in the box this week? Okra, tomatoes, squash, green beans, onions, cucumbers and more!
Before long we will say goodbye to all the wonderful summer veggies and hello to fall seasonal veggies! Though it’s a few weeks away, I will be sad to see so many of my favorite veggies gone for another year! We encourage you to enjoy preparing them in different ways to make the most of them, while we have them.
By the way, in the online country store we have bulk tomatoes, and green peppers. As a suggestion, make some stuffed peppers and freeze them for the cooler months when you want a quick meal.
Don’t forget to dice up some extra green peppers and you can do it for onions also, to freeze on sheet pans and when frozen, dump into Freezer bags for later. Sometime you just don’t want to go to the store for an onion or green pepper to finish out your recipe!
