Area specialty stores now stock fresh-squeezed lime juice along with their other citrus juices. The mixture of fresh juice and the bright flavor of bubbly club soda makes this nonalcoholic punch a favorite. Mojito fans might want to add a little rum to the mix for a lighter take on the popular Cuban cocktail.
20 mint leaves
1 cup lime juice (pre-squeezed)
1 1/2 cups simple syrup
4 cups club soda or seltzer water
Mint sprigs or lime slices (for garnish)
Place mint leaves in a glass pitcher, then bruise gently with the bottom of a sturdy ladle or end of a dowel-style rolling pin. Fill pitcher with ice, then add lime juice, simple syrup and club soda. Serve over ice with garnish of mint sprig or lime slices.
