Howdy CSA friends,

We hope your weekend was enjoyable, and that you’re ready to tackle the new week. Hopefully we will get some much needed rain.

In your CSA share this week we are planning to have the following in the mix for you: Lettuce, Tomatoes, Onions, Squash, Cucumbers, Yukon Gold potatoes, and Okra!   Combo shares this week: Tomatoes.

Being a native Kentuckian, I want to pass along a recipe using the lettuce that’s in your share this week. Mind you this isn’t a recipe you can make often-it isn’t the healthiest recipe around but it’s so good occasionally! In Kentucky we call it “Wilted Lettuce”. Give it a try!

Ingredients:  6 slices bacon,1/4 c. diced green onions, 1/2 cup vinegar, 4 tsp. sugar, and Lettuce that’s been torn into bite size pieces.

Cook bacon till crisp, drain, crumble and set aside.  Reserve drippings from the bacon and place in a skillet if you used a method other than frying the bacon in a skillet,  that can hold the liquid dressing.

Add onions to drippings and cook till tender. Then to that mix add the vinegar, 1/4 cup water, sugar, +1/2 tsp. salt and the crumbled bacon to drippings then bring to a boil. Turn off heat and place the lettuce in heat proof bowl and pour the hot dressing over lettuce and toss. Add sliced radishes and sliced boiled eggs if you like just before serving. Enjoy!
