Greetings from the farm!

This week in your shares we have a versatile medium starch potato for you. Kennebec is the variety and they have a creamy texture and a rich flavor. They hold their shape when cooked without being dense. Demand for medium-starch potatoes during the past decade has increased in part because they adapt easily to the roles played by high and low-starch counterparts. They can be used to make any number of fried potato preparations such as steak fries, hash browns, shoestring potatoes, French fries, potato skins, chips, and Hasselback potatoes. Kennebec potatoes also maintain their shape when cooked, they’re perfect for potato salads, curries, soups, and stews. We like using them for Oven-Roasted Rosemary Potatoes, Here is how we fix them at our house:   Courtesy of Ina Garten

  1. Preheat the oven to 400 degrees F.
  2. Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
  3. Remove the potatoes from the oven, season to taste, and serve. (I use dried Rosemary)

We were blessed with a rain shower yesterday, and of course we hope it’s not too dry at your home. Many places need a bit of relief and some places need a lot of relief! My heart goes out to all the farmers whose farms water supply has been restricted. It has been devastating to many.
