Beets

Love those Beets! Loaded with nutritional benefits!

Good afternoon friends,

The Summer Solstice has come and gone. Summer has arrived and is showing off with the fabulous foods of summer in your shares this week! Eggplant and green bell peppers are making their debut this week and I’m so glad since I just used my last vacuum packed package of bell peppers from our freezer.

What’s in your shares this week? (Our best guess) Eggplant, squash, zucchini, lettuce, green peppers, cucumbers, beets, green beans and some amazing sweet corn!
If there are a few wormy tips on your corn, please don’t discard this corn-just dump the worms, rinse off your corn  and enjoy this outstanding corn. If you do you see a worm that lets you know the corn has not been treated.

More peaches for the fruit/ combo share this week. Here is a link to a nice little recipe for a Summer Peach Upside Down Coffee Cake: https://wholeandheavenlyoven.com/2015/08/10/summer-peach-upside-down-coffee-cake/#wprm-recipe-container-25734

And a link to a recipe for delicious Pickled Beets!  https://www.tasteofhome.com/recipes/pickled-beets/

Succession planting continues on all the farms so we can have plenty of food harvested to hold all of us through the CSA season. One crop goes out and another starts it’s first harvests. There’s always something growing for yourCSA shares. Thus far, all the crops have looked really nice and healthy this season! Thankfully so far, the Cicadas have not been much of a factor.

We hope you are enjoying the food in your shares this season.Stay well and be safe!

Until next week,

Judy
